Potted Veal

Ingredients

Directions

  1. Pound cold veal in a mortar until fine.

  2. Mix in powdered mace and coarse sea salt.

  3. Finely shred the lean part of tongue or ham.

  4. In a jar or pot, layer pounded veal and tongue alternately, pressing down each layer.

  5. Pour melted clarified butter over the top.

  6. For a marbled effect, cut tongue or ham into small dice instead of shredding. Ensure they do not touch each other.
