Mutton Pie

Ingredients

Directions

  1. Cut steaks from a neck or loin of mutton that has hung and beat them.

  2. Remove some of the fat and season with coarse sea salt, black pepper, and a little onion.

  3. Put a little water at the bottom of the dish and place a little pastry on the edge.

  4. Cover with moderately thick pastry, or raise small pies.

  5. Break each bone in two to shorten it, season, and cover it over, pinching the edge.

  6. When they come out of the oven, pour a little second stock into each pie.
