Oyster Patties

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the pastry

  1. Preheat the oven to 400°F (200°C).

  2. Line small patty pans with puff pastry and place a slice of bread in each.

  3. Cover the bread with more pastry and bake until golden.

Make the filling

  1. While baking, remove the gills from the oysters and chop them into small pieces.

  2. In a bowl, combine the oysters, nutmeg, white pepper, salt, lemon peel, cream, and oyster liquor.

  3. Simmer the mixture for a few minutes.

Fill and serve

  1. Remove the bread from the baked patties and fill them with the oyster mixture.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Puff pastry
Forms a flaky, golden shell that holds the filling.
Oysters
Provide the main savoury flavour and tender, briny filling.
Cream
Adds richness and moisture to the filling as it simmers.
Oyster liquor
Adds concentrated oyster flavour and moisture to the filling.
Bread
Lines the pastry to hold its shape during baking, then is removed.

The step that matters

Simmer the filling gently. Oysters toughen and shrink when overcooked, and cream can separate or scorch at high heat. A brief, gentle simmer keeps the filling tender and smooth.

Swap the white pepper

How well each one fits the dish's main ingredients (bread, oyster, nutmeg, lemon, cream):

  1. Marjoramfits better
