Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Asparagus
Forms the main vegetable body of the dish, cooked until tender by boiling.
Butter
Adds richness and flavor to the toast and carries the flavor of the sauce.
All-purpose flour
Thickens the butter and water mixture into a smooth sauce as it heats.
Stale bread
Serves as a sturdy base that soaks up butter and holds the asparagus.

The step that matters

Stirring the sauce while it thickens. Flour mixed into hot butter and liquid can form lumps if not stirred continually. Constant stirring keeps the starch dispersed so the sauce turns smooth as it comes to a boil.

Swap the asparagus

How well each one fits the dish's main ingredients (bread, butter, flour, pepper):

  1. Shallotfits better
  2. Capsicumfits about as well
  3. Leekfits about as well
  4. Asparagusthe original

Fit is the average pairing score against bread, butter, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
