Asparagus in Ambush

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the asparagus

  1. Wash the asparagus tips.

  2. Boil the asparagus tips in salted water for 15 minutes.

  3. Drain the asparagus tips in a colander.

Make the bread boxes

  1. Cut the bread into 1.5‑inch thick slices.

  2. Remove the crusts from the bread slices.

  3. Hollow out the center of each slice to form a box.

  4. Brush the outside of the bread boxes with melted butter.

  5. Bake the bread boxes in a 400°F (200°C) oven until golden brown.

Make the sauce and serve

  1. Fill the centers of the bread boxes with the drained asparagus tips.

  2. Keep the filled bread boxes warm.

  3. Heat the milk in a double boiler.

  4. Beat the egg yolks until light.

  5. Stir the beaten yolks into the hot milk until it begins to thicken.

  6. Remove the sauce from the heat.

  7. Add butter, salt, and pepper to the sauce.

  8. Pour the sauce into the bread boxes.

  9. Serve immediately.

What each ingredient does

Asparagus tips
Provide the main vegetable filling and a tender, green texture.
Bread
Forms a sturdy, crisp box that holds the filling and sauce.
Milk
Forms the base of the sauce, which thickens when heated with the yolks.
Egg yolks
Thicken the hot milk into a smooth, creamy sauce as they set.
Butter
Browns the bread boxes and adds richness to the finished sauce.

The step that matters

Stir the beaten yolks into the hot milk until it begins to thicken. Egg yolks set when heated, so they can curdle or scramble if the milk is too hot or added too fast. Removing the sauce from the heat as it thickens keeps it smooth.

Swap the asparagus
