Why it works: Parsley and pepper match in chemistry and in kitchens. They rank in the top 2% of all ingredient pairs, and cooks put them together in 34,122 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Stuffed Cabbage

Ingredients

Directions

Prepare the cabbage

  1. Place the whole head of Savoy cabbage in a bowl and pour boiling water over it.

  2. Let it stand for 15 minutes, then drain and cover again with boiling water for 30 minutes.

  3. While the cabbage is soaking, wash the rice in cold water and boil for 20 minutes.

Stuff the cabbage

  1. Mix the cooked rice with sausage meat, onion juice, chopped parsley, and a dash of pepper.

  2. Gently press the water from the cabbage and carefully open it to the center.

  3. Stuff about ½ teaspoon of the mixture into the cabbage, folding over two or three leaves to cover.

  4. Continue layering the mixture and folding leaves until all is stuffed, pressing gently but firmly.

Cook and serve

  1. Tie the cabbage in a piece of cheesecloth and place it in a kettle of salted, boiling water.

  2. Boil for 2 hours, then carefully remove the cloth and place the cabbage in a deep round dish.

  3. Pour cream sauce over the cabbage and serve very hot.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Savoy cabbage
Its leaves wrap and hold the filling while the head becomes tender through long boiling.
Rice
Absorbs flavour and binds with the sausage to give the filling body and a moist, soft texture.
Sausage meat
Adds fat and savoury richness that moistens the rice filling as it cooks.
Onion juice
Adds a sharp, aromatic onion flavour to the filling.

The step that matters

Pressing the filling into the leaves. Packing too loosely lets the filling fall out or cook unevenly, while packing too tightly stops the rice from expanding and can tear the leaves. Gentle but firm pressure keeps the parcels intact and the filling evenly cooked.

Swap the cabbage

How well each one fits the dish's main ingredients (rice, meat, onion, parsley, pepper):
