What each ingredient does

Cucumbers
Form the main body of the dish, becoming tender inside while the coating crisps outside.
Egg
Binds the bread crumbs to the cucumber slices so the coating holds during frying.
Bread crumbs
Form a crisp, golden coating that browns in the hot fat.
Lard or dripping
Conducts heat for frying and gives the coating its browning and rich flavour.

The step that matters

Fry a few slices at a time. Crowding the pan drops the fat temperature, so the coating steams and absorbs grease instead of crisping. Frying in small batches keeps the fat hot and the crumbs crisp.
