Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Peel the mushrooms and cut the stalks close to the top.

  3. Place the mushrooms upside down in an earthen or porcelain dish.

  4. Sprinkle with coarse sea salt and black pepper.

  5. Add a tiny piece of butter to each mushroom.

Bake and serve

  1. Bake for 20 minutes, basting two or three times with melted butter.

  2. Serve hot in the baking dish.

What each ingredient does

Large mushrooms
Form the main body of the dish, softening as they bake and holding the butter.
Butter
Adds moisture and richness, and browns as it melts over the mushrooms during basting.

The step that matters

Basting with melted butter. Basting two or three times during the 20 minutes keeps the mushroom surfaces moist and helps them brown evenly, so they do not dry out in the oven.
