Why it works: Lemon and ginger match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 5,154 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Pumpkin Preserved in Pieces
Ingredients
Directions
Prepare the pumpkin
Peel the pumpkin, cut it in half and remove the seeds.
Divide each half into 2-inch square pieces and place the pieces in a stone jar.
Add ½ cup of coarse sea salt and cover with cold water.
Let it sit for 5 hours.
Drain the pumpkin, cover with fresh cold water and soak for 2 hours, changing the water 3 or 4 times.
Dissolve 1 teaspoon of powdered alum in 2 quarts of boiling water and add to the pumpkin.
Bring to a boil.
If omitting alum, bring the pumpkin to a boil in the water and drain.
Make the syrup and cook
In a preserving kettle, combine 2½ pounds of granulated sugar and 1½ quarts of boiling water.
Boil and skim until clear.
Add the pumpkin to the syrup and cook gently until tender enough to pierce with a skewer.
Carefully lift each piece with a skimmer and place on a large plate.
Let them sit in the sun for 2 hours to harden.
Flavour and jar
Chip the yellow rind from 1 large lemon and add it to the syrup along with the juice of 2 lemons and the sliced ginger.
Boil the syrup for 10 minutes and let it cool.
Once the pumpkin is hardened and cold, place it in glass jars.
Bring the syrup back to a boil and strain it over the pumpkin.
Seal the jars when cool.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Sugar and ginger barely smell alike, yet cooks put them together in 14,054 recipes: they work on texture and structure more than aroma.
Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Pumpkin
- Forms the firm, tender body of the preserve that holds the syrup.
- Granulated sugar
- Sweetens the syrup and, at high concentration, helps preserve the pumpkin.
- Coarse sea salt
- Draws water out of the pumpkin during the initial salt soak, firming its texture.
- Lemon
- Adds acidity and aroma from the juice and zest, balancing the sweetness of the syrup.
The step that matters
Cook the pumpkin gently until tender. Boiling hard breaks the pumpkin pieces apart, while gentle cooking lets sugar penetrate slowly so the pieces stay whole and become translucent. Testing with a skewer confirms tenderness before the pieces are lifted out to harden.
Swap the pumpkin

Fit is the average pairing score against sugar, lemon, ginger. Candidates are from the same food group and used in at least 100 recipes.
