Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Lentils
Form the body of the soup and thicken it as they break down during long simmering.
Butter
Carries the frying of the aromatics, adding richness and helping the onion brown.
Onion
Browning in butter builds sweetness and savory depth in the base.
Stock
Supplies the cooking liquid and the main savory flavor of the soup.

The step that matters

Fry the onion until light brown. Browning the onion in butter develops sweet, savory flavors through the Maillard reaction. Pale or burnt onion will taste flat or bitter in the finished soup.
