What each ingredient does

Lettuce
Forms the crisp, leafy base of the salad and provides its fresh texture.
French dressing
Adds moisture, acidity and flavour to the leaves when served alongside them.

The step that matters

Drying each leaf. Excess water left on the leaves dilutes the dressing and makes it slide off, so the leaves should be dried gently on a soft towel without bruising or tearing them.
