Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the meat

  1. Chop the meat finely.

  2. Mix all ingredients well, without adding water.

Press and bake

  1. Butter a small deep pan and press the meat mixture down hard into it.

  2. Cover the top with melted butter.

  3. Bake in a moderate oven at 350°F (175°C) for about 1 hour.

Serve

  1. When cold, turn out onto a platter and cut into thin slices.

What each ingredient does

Raw beef
Provides the protein that firms up into a sliceable loaf when baked and cooled.
Egg
Binds the meat and crackers together so the pressed mass holds its shape when sliced.
Powdered crackers
Absorb juices and help bind the meat, giving the patty a firmer, more even texture.
Summer savory
Adds a savory, herbal aroma that flavors the meat through the mixture.
Thyme
Adds an earthy, aromatic flavor that complements the beef.

The step that matters

Press the meat mixture down hard into the pan. Firm packing removes air gaps so the loaf bakes dense and holds together when cut. Loose packing can crumble once cold and sliced.
