What each ingredient does

Cucumbers
Their pulp forms the body of the ketchup, and draining removes excess liquid so it thickens.
Vinegar
Provides acidity that preserves the ketchup and gives it its sharp, tangy flavour.
Onions
Add savoury depth and aroma to the sauce.
Red peppers
Add sweetness, colour and a mild pepper flavour.

The step that matters

Draining the cucumber pulp overnight. Cucumbers hold a lot of water. Draining off the liquid before mixing keeps the ketchup thick rather than thin and watery, and removes liquid that could dilute the vinegar and weaken its preserving effect.

Swap the onion

How well each one fits the dish's main ingredients (cucumber, vinegar, pepper):

  1. Capsicumfits better
  2. Radishfits better
