What each ingredient does

White beans
Break down as they cook, giving the soup its body and thickness.
Pork or ham bone
Releases savory flavor and fat into the broth during the long simmer.
Onions
Soften and turn sweet as they cook, adding aroma and depth to the broth.

Swap the beans

How well each one fits the dish's main ingredients (pork, onion, pepper):

  1. Sesamefits about as well
  2. Black-eyed peafits about as well
  3. Beansthe original
  4. Soybeanfits less well
