Turkey, to Boil

Ingredients

Directions

Prepare the turkey

  1. Pluck the turkey carefully, draw, and singe it.

  2. Wash the inside with warm water and wipe dry with a cloth.

  3. Cut off the head and neck close to the backbone, leaving enough crop skin to turn over the stuffing.

  4. Draw the sinews from the legs and cut off the feet just below the first joint.

  5. Press the legs into the sides and skewer them firmly.

  6. Fill the breast with sausage or forcemeat, or bread crumbs, herbs, and onions.

Boil and skim

  1. Put the turkey into sufficient hot water to cover it and boil gently for 1.5 to 2 hours.

  2. Remove the scum as it rises.

What each ingredient does

Turkey
Forms the main body of the dish, cooked gently in water until tender.
Sausage or forcemeat, or bread crumbs
Fills the breast, adding body and moisture to the cooked bird.
Herbs
Add aroma to the stuffing as it cooks inside the bird.
Onions
Add savory flavor and aroma to the stuffing inside the bird.

The step that matters

Boil gently, not vigorously. A rolling boil toughens meat proteins and can break the skin, while gentle simmering cooks the bird evenly. Skimming scum as it rises keeps the broth clear and removes impurities that would cloud it.

Swap the onion

How well each one fits the dish's main ingredients (turkey, bread):

  1. Tomatofits better
  2. Capsicumfits better
  3. Carrotfits better
  4. Onionthe original
