Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Cook the tapioca in a double boiler with water until transparent.

  2. Stew the apples until soft.

  3. Add the stewed apples and sugar to the tapioca.

Bake and serve

  1. Pour the mixture into a pudding dish and bake at 350°F (175°C) for one hour.

  2. Alternatively, you can cook the entire mixture in the double boiler.

  3. Serve hot with cream and sugar.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Minute tapioca
Thickens the mixture and turns clear and gel-like as its starch cooks.
Apples
Provide moisture, body and fruity tartness as they soften.
Sugar
Adds sweetness and balances the tartness of the apples.

The step that matters

Cook the tapioca until transparent. Tapioca starch must be fully cooked and hydrated to swell and turn clear. If it is underdone, the pudding stays chalky, grainy and firm in the mouth.

Swap the apple

How well each one fits the dish's main ingredients (sugar, cream):

  1. Vanillafits better
  2. Strawberryfits better
  3. Raspberryfits better
  4. Applethe original

Fit is the average pairing score against sugar, cream. Candidates are from the same food group and used in at least 100 recipes.
