Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 300°F (150°C).

  2. In a bowl, cream together the butter and sugar until soft.

  3. Add the eggs one at a time, beating each in thoroughly.

  4. Sift the flour and baking powder together, then stir into the butter and sugar mixture.

  5. Add the cleaned fruit and chopped mixed peel, and mix well.

  6. Pour the batter into a cake tin lined with paper, but not greased.

  7. Bake for three hours.

  8. Once done, turn out the cake and let it cool.

  9. Cover the top with a layer of almond icing, then ice it with royal icing and decorate.
