Balmoral Cake

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Break the eggs into a bowl and add the sugar.

  2. Place the bowl over a saucepan of hot water and beat the mixture for 20 minutes until thick and creamy.

  3. Sift the flour and gently fold it into the egg and sugar mixture.

Bake and cool

  1. Grease a cake tin with butter and sprinkle with sugar.

  2. Pour the batter into the prepared tin and bake at 300°F (150°C) for 20 to 30 minutes.

  3. Turn the cake out onto a wire rack to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped with sugar to trap air, giving the cake its light, airy structure.
Sugar
Sweetens the cake and helps the egg foam become thick and stable when beaten.
Flour
Forms the cake's structure as it sets in the oven.

The step that matters

Beating the eggs and sugar. Beating over hot water until thick and creamy traps air in the egg foam, which is what makes the cake rise light. Under-beating leaves a dense cake.
