Directions

Prepare the giblets

  1. Scald and clean the giblets thoroughly, then cut them into pieces.

  2. Put the giblets in a pot with stock (or water and gravy beef), sweet herbs, onions, whole white pepper, salt, and lemon peel.

  3. Cover with water and stew until the giblets are tender, then strain the soup.

Thicken and finish

  1. In a separate pan, melt butter and stir in flour until brown.

  2. Pour the strained soup into the pan, bring to a boil while stirring.

  3. After 10 minutes, skim and strain the soup again.

What each ingredient does

Goose giblets
Provide the main meat and rich flavour of the soup.
Butter and flour
Form a browned roux that thickens the soup and adds nutty flavour.
Madeira
Adds sweetness and depth of flavour at the end of cooking.
Mushroom ketchup
Adds savoury, umami depth to the soup.
Lemon juice
Adds acidity that brightens the rich broth.

The step that matters

Browning the flour in butter. Flour cooked in butter must be stirred until evenly browned before the soup is added. Undercooked roux tastes raw and thickens poorly, while over-browned roux turns bitter and dark.

Swap the white pepper

How well each one fits the dish's main ingredients (beef, onion, lemon, butter, flour, pepper, mushroom):

  1. Thymefits better
  2. Parsleyfits better
  3. Marjoramfits better
  4. White pepperthe original

Fit is the average pairing score against beef, onion, lemon, butter, flour, pepper, mushroom. Candidates are from the same food group and used in at least 100 recipes.
