Ingredients

Directions

The book says “a moderate oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Make the mixture

  1. In a stew-pan, combine veal, fresh butter, lemon juice, pepper, salt, mace, bay leaf, allspice, cloves, nutmeg, cinnamon, mushroom powder, thyme, savory, and chopped shallots.

  2. Stew for 10 minutes, then pound the mixture.

  3. Add the boiled tongue paste and cold butter, mixing well.

  4. Incorporate the beaten eggs into the mixture.

Bake and serve

  1. Press the mixture lightly into small pots, cover with paper.

  2. Bake in a 350°F (175°C) oven for 20 minutes.

  3. Pour clarified butter over the top before serving.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the main meat body that the mixture is built around.
Fresh butter
Adds richness and fat that keeps the mixture moist and smooth.
Boiled tongue
Adds meaty bulk and a dense, spreadable texture when beaten to a paste.
Eggs
Bind the mixture so it holds together and sets when baked.
Shallots
Contribute a mild aromatic sweetness and savoury base flavour.

The step that matters

Pounding and mixing before adding the eggs. Beating the mixture into a fine, even paste distributes fat and seasonings uniformly. Adding beaten eggs to a mixture that is still warm or unevenly blended can cause curdling or a grainy texture once baked.

Swap the mace
