A Truffle Pie, Hot

Ingredients

Directions

The book gives no oven temperature. The 300°F (150°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare a pie crust that fits your dish, no deeper than 3 inches.

  2. Make a truffle farce.

  3. Fill the pie with the farce.

  4. Layer the braised truffles on top of the filling.

  5. Cover the truffles with sheets of fat bacon.

  6. Seal the pie.

  7. Decorate as desired.

Bake and finish

  1. Bake in a slow oven at 300°F (150°C) for 30 minutes.

  2. Remove from the oven.

  3. Take off the top.

  4. Discard the bacon.

  5. Pour in the Madeira wine.

  6. Replace the top.

  7. Serve hot.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

What each ingredient does

Truffles
Provide the main aroma and flavour of the filling and topping.
Fat bacon sheets
Cover the truffles and release fat that keeps the filling moist while baking.
Madeira wine
Adds sweetness and a rich, aromatic flavour to the pie.
Pie crust
Encloses the filling and gives the pie its structure.

The step that matters

Bake in a slow oven at 300°F (150°C) for 30 minutes. A low, gentle oven heat cooks the filling evenly without drying it or toughening the truffles, which are delicate and can lose aroma under harsh heat.
