Why it works: Capers and parsley match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 1,550 recipes. Both carry coumarin, which smells sweet, hay. The science ↓

Victoria Mutton

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the mutton

  1. Fry the onion until brown, then remove it from the saucepan.

  2. Pour in the drawn butter and capers, and heat until hot.

  3. Add the cold mutton pieces and stir until the meat is heated through.

Assemble and bake

  1. Prepare a platter with a border of mashed potatoes mixed with enough milk to moisten.

  2. Press the potato border down with a fork to flute it, then brown slightly in the oven at 350°F (175°C).

  3. Pour the heated mutton into the center of the platter and garnish with bits of parsley.

What each ingredient does

Cold mutton
Provides the meat that is reheated in butter and becomes the main filling.
Mashed potatoes
Forms the border and, when browned, adds a golden surface and soft texture.
Drawn butter
Carries the flavor and moisture, keeping the reheated meat from drying out.
Milk
Loosens the mashed potatoes so they are moist enough to pipe and shape.
Onion
Browned first to add savory, sweet depth to the butter.

The step that matters

Press the potato border down with a fork to flute it, then brown slightly in the oven at 350°F (175°C).. Potatoes brown through the Maillard reaction at the surface, but over-baking dries the border. A light brown is enough, since the potatoes are already cooked.

Swap the capers

How well each one fits the dish's main ingredients (onion, butter, mutton, potato, milk, parsley):

  1. Thymefits better
  2. Garlicfits better
  3. Celeryfits about as well
  4. Capersthe original

Fit is the average pairing score against onion, butter, mutton, potato, milk, parsley. Candidates are from the same food group and used in at least 100 recipes.
