Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Releases collagen into the water, which sets as a gel when the liquid cools.
Hard boiled eggs
Provide a firm, sliced contrast pattern visible in the finished set jelly.

The step that matters

Boil until it jellies. The liquid must be reduced enough that its gelatin concentration is high enough to set firmly when cold. Too little boiling leaves a loose jelly that will not hold its shape when turned out and sliced.

Swap the clove

How well each one fits the dish's main ingredients (veal, allspice, egg):

  1. Nutmegfits better
  2. Parsleyfits about as well
  3. Clovethe original
  4. Marjoramfits about as well

Fit is the average pairing score against veal, allspice, egg. Candidates are from the same food group and used in at least 100 recipes.
