What each ingredient does

Beef tongue
Provides the main body and rich, meaty flavor of the confit.
Lean veal
Adds mild meaty flavor and a fine, tender texture when chopped small.
Butter
Covers the packed meat to seal out air and help it keep for several days.
Prepared mustard
Adds sharp, tangy flavor that cuts through the richness of the meat.

The step that matters

Pack the tongue and veal firmly. Pressing the alternating layers very hard removes air pockets and binds the chopped meats into a dense mass. Air left inside lets the surface spoil faster during storage.
