Rocky Mountain Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until stiff.

  3. In a separate bowl, cream the butter and sugar together.

  4. Add the sweet milk and mix well.

  5. Sift together the flour and baking powder, then gradually add to the butter mixture.

  6. Flavor the batter with rose.

  7. Prepare the filling by scalding the almonds, removing the shells, and drying them thoroughly.

  8. Chop the almonds into small pieces.

  9. Grate the coconut and chop the figs, currants, and raisins.

  10. For the icing, beat 4 egg whites and gradually add 1 pound of powdered sugar until smooth.

  11. Spread icing between the layers of cake and sprinkle with the nuts and fruits.
