Directions

Make the filling

  1. In a bowl, combine the chopped chicken, pepper, cayenne, salt, celery salt, lemon juice, and onion juice.

  2. In a saucepan, melt the butter, add the flour, and stir to make a roux. Gradually add the cream or milk to the roux, stirring until thickened.

  3. Mix the sauce with the seasoned chicken and let it cool.

Shape and coat

  1. Shape the mixture into croquettes.

  2. Dip each croquette in seasoned breadcrumbs, then in a mixture of beaten egg and water, and again in breadcrumbs.

Fry and drain

  1. Fry in hot oil until golden brown and drain on paper towels.

What each ingredient does

Cooked chicken
Forms the bulk of the croquette and provides the main flavor and filling.
Flour
Thickens the butter and cream into a roux that binds the chicken mixture.
Cream or milk
Adds moisture and richness, forming a sauce that holds the filling together.
Egg
Binds the breadcrumb coating so it adheres and sets during frying.

The step that matters

Let the filling cool before shaping. A warm, loose sauce cannot hold its shape and will leak or split during shaping and frying. Cooling lets the starch set so the croquettes keep their form.

Swap the onion

How well each one fits the dish's main ingredients (chicken, pepper, celery, lemon, cream, butter, flour):

Fit is the average pairing score against chicken, pepper, celery, lemon, cream, butter, flour. Candidates are from the same food group and used in at least 100 recipes.
