Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg
Thickens the dressing as it cooks and gives it body and richness.
Milk
Adds moisture and softens the dressing so the egg blends in smoothly.
Vinegar
Adds acidity that gives the dressing its sharp, tangy flavour.
Butter
Adds fat for a smoother, richer mouthfeel.

The step that matters

Cooking over hot water. Egg proteins set gently over indirect heat. If the mixture gets too hot it can scramble or curdle, which is why the step stresses stirring constantly and gives a cold-water rescue.
