What each ingredient does

Cranberries
Provide the tart fruit flavor and the pectin that helps the mixture set.
Sugar
Adds sweetness and balances the cranberries' tartness.

The step that matters

Stop stirring and boil for 2 minutes, or until it jellies. Stirring once the sugar has dissolved keeps the mixture from crystallizing, and boiling concentrates the pectin and sugar so the liquid sets into a jelly as it cools.
