Custard Pudding

Ingredients

Directions

Make the pudding

  1. Soak the tapioca in enough hot water to cover it until it absorbs the water.

  2. Add the milk and cook until the tapioca is soft and transparent.

  3. Stir in the egg yolk, sugar, and salt, and cook for three minutes.

  4. Remove from heat, then add the beaten egg white and flavoring.

Cool and finish

  1. Let it cool before serving.

  2. Optionally, use the egg white to make a meringue and brown it slightly in the oven.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tapioca
Thickens the milk as it cooks and turns the custard soft and translucent.
Milk
Forms the liquid base that the tapioca swells in and sets into a custard.
Egg yolk
Enriches the custard and helps thicken it as it cooks.
Egg white
Adds lightness when beaten into the custard and can be whipped into a meringue.

The step that matters

Stirring in the egg yolk and cooking for three minutes. Egg yolk thickens when heated, but if the mixture gets too hot or is cooked too fast it can curdle or turn grainy. Keep the heat gentle and stir constantly.
