Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ripe red tomatoes
Provide the main body, acidity and flavour of the sauce as they break down with heat.
Capsicum
Adds sweet, vegetal flavour and body as it softens into the sauce.
Beef gravy
Adds savoury depth and richness, rounding out the tomato's acidity.

The step that matters

Cook on low heat until melted. Gentle heat softens the tomatoes and capsicum slowly, so they break down into a smooth pulp without scorching. Too high a heat can burn the sugars and make the sauce taste bitter.

How well each one fits the dish's main ingredients (tomato, capsicum, beef):

  2. Corianderfits better
  3. Pepperfits better
