What each ingredient does

Mutton
Provides the meat that becomes tender during long, gentle heating in the gravy.
Currant jelly
Adds sweetness and a fruity tang that balances the savoury gravy.
Pickled cucumber
Adds acidity that brightens the rich, heavy gravy.
Silver onions
Add mild savoury flavour and body to the gravy as they soften.
Allspice
Adds warm, aromatic spice notes to the gravy.

The step that matters

Adding the cucumber and jelly at the right time. Acidic and sweet ingredients added too early can overpower the gravy or break down the pickled cucumber's texture. Adding them near the end keeps their flavour bright and distinct.

Swap the currant
