What each ingredient does

Ripe tomatoes
Forms the body of the sauce and supplies most of its sweetness and savory flavor.
Vinegar
Adds sharp acidity that balances the sweetness and keeps the sauce tangy.
Brown sugar
Adds sweetness and a deeper, molasses-like flavor that offsets the acid.
Silver onions
Add savory, aromatic flavor and small pieces of texture throughout the sauce.
Horseradish
Adds sharp, pungent heat that mellows as the sauce sits.
Ginger
Adds warm, aromatic spice that rounds out the sauce.

The step that matters

Pass the stewed tomatoes through a sieve or colander. Straining removes skins and seeds that would otherwise leave the ketchup grainy and uneven in texture, so the sauce must be pressed through thoroughly.

Swap the tomato

How well each one fits the dish's main ingredients (vinegar, onion, horseradish, ginger, pepper, allspice, sugar):

  1. Mustardfits better
  2. Radishfits better
  3. Shallotfits better

Fit is the average pairing score against vinegar, onion, horseradish, ginger, pepper, allspice, sugar. Candidates are from the same food group and used in at least 100 recipes.
