French Beefsteak

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 400°F (200°C).

  2. Dust the beef slices with flour and sprinkle with coarse sea salt.

Braise

  1. Place the beef in the oven with shredded suet and fry for five hours.

  2. After frying both sides, add enough water to cover the meat.

  3. Let the meat stew until dinner.

Finish and serve

  1. About 45 minutes before serving, add small silver onions and large potatoes; cook until done.

  2. Ten minutes before serving, add thickening and season with salt and black pepper.

What each ingredient does

Beef
Provides the main meat; slow cooking softens its connective tissue into a tender texture.
Shredded suet
Adds fat that enriches flavor and helps brown the beef as it fries.
Flour
Dusted on the beef, it helps the surface brown and lightly thickens the cooking liquid.
Potatoes
Starch that softens during cooking, adding body and absorbing savory juices.
Small silver onions
Soften and turn sweet as they cook, balancing the savory beef.
Thickening (such as cornstarch)
Starch that swells when heated, thickening the stew liquid into a glossy sauce.

The step that matters

Adding the thickening. Starch thickens only when heated in liquid and can clump if added dry or unmixed. Adding it near the end and letting it simmer briefly gives a smooth sauce without over-thickening.
