Pork a LA Mode

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Rub a little flour on the pork steaks.

  2. Place the steaks in a 400°F (200°C) oven and fry on each side until half cooked.

  3. Pour enough water to cover the steaks and let them stew.

  4. Add the finely chopped onion for seasoning.

  5. Five minutes before serving, season with salt and black pepper.

  6. Add thickening, then mix in equal parts vinegar and sugar to flavor the dish.

  7. Add just enough fine pounded allspice to darken the stew.

  8. Stew the meat until it is as tender as chicken.
