Why it works: Apple and sugar are a kitchen classic. They rank in the top 18% of all ingredient pairs, and cooks put them together in 16,478 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Ingredients

Directions

Prepare the fruit

  1. Pare the crab apples and weigh them.

  2. In a skillet, combine the parings, a few quartered crab apples, and water; boil for 30 minutes.

  3. Strain the juice through a coarse cloth and add the sugar to make the syrup.

Make the preserve

  1. Add the crab apples to the syrup and boil until they turn a pretty red.

  2. Remove the fruit and let the syrup cool until it becomes a thin jelly.

  3. Once both syrup and fruit are cold, place them in jars and cover tightly.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Crab apples
Provide the fruit body and natural pectin that help the syrup set into a jelly.
Sugar
Sweetens the preserve and, with the cooked juice, thickens the syrup as it cools.
Water
Extracts flavor and pectin from the parings and fruit during the initial boil.

The step that matters

Letting the syrup cool to a thin jelly. Pectin and sugar set as the syrup cools, so removing the fruit at the right moment and allowing enough cooling lets it gel rather than stay runny or over-thicken.

Swap the apple

How well each one fits the dish's main ingredients (crab, sugar):

  1. Raisinfits better
  2. Lemonfits better
  3. Vanillafits better
  4. Applethe original

Fit is the average pairing score against crab, sugar. Candidates are from the same food group and used in at least 100 recipes.
