What each ingredient does

Shin of beef
Provides the meat and connective tissue that release gelatin and flavour into the stock during long simmering.
Lean ham
Adds savoury, salty depth to the broth as it simmers.
Onions
Contribute sweetness and aromatic flavour to the broth.
Carrots
Add gentle sweetness and body to the stock.
Celery
Adds a fresh, vegetal aroma to the stock.

The step that matters

Skimming during the simmer. Impurities and fat rise to the surface as the stock simmers. Skimming them off regularly keeps the broth clear and clean-tasting rather than cloudy or greasy.
