Why it works: Onion and cucumber match in chemistry and in kitchens. They rank in the top 8% of all ingredient pairs, and cooks put them together in 6,050 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Fried Mutton Chops

Ingredients

Directions

  1. Trim the mutton chops and season with pepper and coarse sea salt.

  2. Fry the chops in their own fat or pork fat, turning them often until browned.

  3. In a separate bowl, mix flour with a little water to make a batter.

  4. Pour the batter over the fried chops and serve hot.

  5. For the cucumbers, slice them and place in a deep dish, sprinkling with salt and drizzling with vinegar.

  6. Fry the chops until nicely browned, then place them in a stewpan.

  7. Drain the cucumbers and layer them over the chops, adding chopped onions, pepper, and salt.

  8. Cover with weak broth and stew, skimming occasionally.
