Mutton Croquettes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Cut the mutton into pieces about the size of your finger.

  2. Lard the pieces with bacon and simmer them in stock with sweet herbs until cooked.

  3. Remove the meat and reduce the gravy, then strain it over the pieces.

  4. Season each piece with fowl seasoning and wrap it in a slice of bacon.

  5. Brush with egg and sprinkle with bread crumbs.

  6. Bake at 350°F (175°C) until golden.
