Why it works: Pepper and sage match in chemistry and in kitchens. They rank in the top 3% of all ingredient pairs, and cooks put them together in 5,388 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Pork Cutlets
Ingredients
Directions
Trim the pork cutlets into a neat form and remove excess fat.
For broiling, sprinkle with pepper and broil over a moderate fire for 15-20 minutes.
Just before removing from heat, sprinkle with coarse sea salt.
For frying, flour the cutlets and season with pepper, salt, and sage.
Optionally, dip the cutlets in beaten egg and then in bread crumbs mixed with minced sage.
For broiling, add clarified butter to the egg or sprinkle it on the cutlets before cooking.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Swap the sage
How well each one fits the dish's main ingredients (pork, pepper, flour, egg, bread, butter):
- Nutmegfits about as well
- Parsleyfits about as well
- Sagethe original
- Marjoramfits about as well
Fit is the average pairing score against pork, pepper, flour, egg, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
