Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Potatoes
Hold their shape and give the chowder body as they cook and soften.
Cod
Provides the main protein, flaking into tender pieces during the long simmer.
Salt pork
Renders fat into the kettle, adding savoury richness to the broth.
Flour
Thickens the cooking liquid into a looser, creamier broth when stirred in and simmered.

The step that matters

Adding the flour slurry. Flour must be fully mixed into cold water first and added once the stew is simmering; poured in dry or into a boiling liquid, it clumps and thickens unevenly.

Swap the potato

How well each one fits the dish's main ingredients (pork, flour, pepper):

  1. Capsicumfits better
  2. Potatothe original
  3. Turnipfits about as well
  4. Spinachfits about as well

Fit is the average pairing score against pork, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
