Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Mushrooms
Form the powder's base; cooking off their liquid concentrates their savory flavor.
Butter
Adds fat that carries the seasonings and helps the mushrooms brown gently as they cook.
Onions
Contribute savory sweetness and aroma as they cook down with the mushrooms.
Mace
Adds warm, aromatic spice flavor to the mushrooms.

The step that matters

Cook until the liquid evaporates. Mushrooms release a lot of water as they cook. If it is not fully driven off, the mushrooms stay damp, cannot dry properly on the sieves, and may spoil or clump instead of grinding into a fine powder.

Swap the nutmeg

The recipe marks nutmeg as optional. How well each one fits the dish's main ingredients (mushroom, mace, pepper, onion, clove, butter):

  1. Thymefits about as well
  2. Nutmegthe original
  3. Allspicefits about as well
  4. Marjoramfits about as well

Fit is the average pairing score against mushroom, mace, pepper, onion, clove, butter. Candidates are from the same food group and used in at least 100 recipes.
