Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Remove the fat from the rump steak.

  2. Fill it with duck stuffing, bread, sweet salt pork, sage, chopped onions, pepper, and coarse sea salt.

  3. Roll it up, skewer the ends tightly, and tie a string around the middle.

Cook

  1. Simmer in a covered pan with a little stock for two hours.

  2. Remove from the pan and bake in the oven at 350°F (175°C) for another hour without cover.

What each ingredient does

Rump steak
Forms the outer wrap that holds the stuffing and becomes tender during slow cooking.
Duck stuffing
Provides the flavour and moisture that the steak roll is built around.
Bread
Adds bulk and absorbs the juices and fat from the filling.
Sweet salt pork
Adds fat that keeps the filling moist and carries savoury flavour.
Onions
Add aroma and sweetness as they soften in the filling.

The step that matters

Simmer in a covered pan with a little stock for two hours.. Slow, moist cooking breaks down the connective tissue in the tougher rump steak so it becomes tender, while the covered pan keeps the liquid from evaporating. Skipping the long simmer leaves the meat chewy.

Swap the onion
