Why it works: Pepper and nutmeg match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 13,015 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Pigeok Pie

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Prepare a fine puff pastry and lay a border around a large dish.

Fill the dish

  1. Place the veal cutlet or steak at the bottom, seasoned with salt, cayenne, and nutmeg.

  2. Arrange the pigeons in a single layer, breast down, adding a slice of butter seasoned with cayenne and mace in each.

  3. Add the yolks of boiled eggs between and over the pigeons, and dot with plenty of butter.

  4. Season the entire dish with salt and spices, then pour in cold water or veal broth for gravy.

Cover and bake

  1. Roll out the pastry cover to ¾ inch thick, secure it around the edge, and decorate.

  2. Bake the pie for an hour or more at 400°F (200°C).

What each ingredient does

Puff pastry
Forms a flaky, crisp crust that encloses the filling and browns in the oven.
Veal cutlet or tender rump steak
Adds meaty flavour and, as it cooks, savoury juices that enrich the gravy.
Freshly killed young pigeons
Provide the main meat, with tender flesh that cooks through in the baked filling.
Butter
Adds richness and moisture, carrying the seasonings and keeping the meat juicy.
Boiled eggs (yolks of 6 or more)
Yolks add richness and a firm, creamy texture among the meat.
Veal broth or cold water
Becomes the gravy that moistens the filling during baking.

The step that matters

Cover and bake the pie. The pastry must be sealed well at the edge so steam and juices stay inside, keeping the meat moist. A long bake at a steady oven temperature lets the pigeon and veal cook through while the crust browns.

Swap the nutmeg

How well each one fits the dish's main ingredients (veal, pepper, butter, egg):

  1. Parsleyfits better
  2. Sagefits about as well
  3. Nutmegthe original
  4. Tarragonfits about as well

Fit is the average pairing score against veal, pepper, butter, egg. Candidates are from the same food group and used in at least 100 recipes.
