What each ingredient does

Black currants
Provide the fruit flavor and juice that becomes the base of the syrup.
Vinegar
Extracts juice from the fruit and adds acidity that sharpens the sweet flavor.
Sugar
Sweetens the juice and, when boiled down, thickens it into a syrup that helps preserve it.

The step that matters

Boil gently for 45 minutes, skimming off any foam. Boiling too hard can scorch the sugar and cause the syrup to darken or taste bitter. Gentle heat dissolves the sugar evenly while foam is skimmed so the syrup stays clear.
