Lemon Ficklb

Ingredients

Directions

  1. Rub the lemons with a piece of flannel.

  2. Slit the lemons into quarters, but do not cut through the pulp.

  3. Fill the slits with pressed coarse sea salt.

  4. Place the lemons in a pan for four to five days until the salt melts.

  5. Soak the lemons for three more days until they become tender in their liquid.

  6. Make enough pickle to cover the lemons using ripe vinegar, the brine from the lemons, Jamaica pepper, and ginger.

  7. Boil the mixture and skim off any foam.

  8. Pour the pickle over the lemons when ready.
