Jerusalem Artichokes

Ingredients

Directions

  1. Boil the Jerusalem artichokes in cold water until tender.

  2. Remove from water immediately to avoid mushiness.

  3. For a purée, rub boiled artichokes through a sieve with fresh butter and cream.

  4. Slice and fry the artichokes in equal parts lard and butter.

  5. For stuffed artichokes, parboil, remove middle leaves, fill with forcemeat, and bake until cooked.

  6. Serve with melted butter or egg sauce.
