Orange Biscuits

Ingredients

Directions

The book says “a hot oven”. The 350°F (175°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the mixture

  1. Grate the rind from the oranges.

  2. In a mortar, combine the orange rind, sweet almonds, pounded sugar, and egg whites.

  3. Mix well with a pestle until the mixture is light.

Shape and bake

  1. Drop small lumps of the mixture, about the size of a walnut, onto double paper on a baking tin.

  2. Space them apart as they will spread while baking.

  3. Bake in a moderate oven at 350°F (175°C) until done.

  4. Remove from the oven and let cool before taking them off the paper.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet almonds
Provide the bulk and nutty flavor that gives the biscuits their body.
Pounded lump sugar
Sweetens the biscuits and helps create a crisp, tender texture as it caramelizes.
Egg whites
Bind the mixture and, when beaten, lighten it and help the biscuits set.
Orange rind
Adds aromatic citrus flavor to the biscuits.

The step that matters

Spacing the lumps. The mixture spreads as it bakes, so lumps placed too close together will merge into one another. Leaving room lets each biscuit keep its shape and bake evenly.
