What each ingredient does

Blackberries
Provides the fruit flavor and most of the jam's bulk.
Sugar
Sweetens the jam and helps preserve the fruit and help it set.

The step that matters

Screw on the covers quickly and tightly. Covers must go on promptly while the jars are still hot so the contents cool into a vacuum seal. Waiting too long lets air in, and the seal may fail.
