Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. In a large bowl, mix together the milk, beaten eggs, and butter.

  2. Add the cream of tartar, baking soda, and sugar, and mix well.

  3. Gradually add rye meal until the batter is thick.

Bake

  1. Drop spoonfuls of the batter onto a baking sheet.

  2. Bake in a preheated oven at 350°F (175°C) for 30 minutes.

What each ingredient does

Eggs
Bind the batter and add structure and richness as they set in the oven.
Cream of tartar
Acidifies the batter so baking soda can react and help the cakes rise.
Baking soda
Reacts with the acid in the batter to release gas that lifts the drop cakes.
Rye meal
Provides the base flour that thickens the batter and gives the cakes their rye flavor.
Milk
Hydrates the rye meal and adds moisture and tenderness to the cakes.
Butter
Adds fat that contributes richness and a tender crumb.

The step that matters

Gradually add rye meal until the batter is thick. Rye flour has less gluten than wheat and absorbs liquid differently, so adding it slowly lets you judge the consistency. Too much makes dense cakes, while too little leaves the batter runny and spreading.
