Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Scraped horseradish
Provides the sharp, pungent flavor that defines the condiment.
Flour of mustard
Forms the thick body of the paste and adds mustard's sharp bite.

The step that matters

Beating to the desired thickness. Mustard flour thickens as it absorbs liquid and its pungency develops over time. Beating while adding the flour gradually avoids lumps and lets you judge the consistency before bottling.

Swap the mustard

How well each one fits the dish's main ingredients (horseradish, flour):

  1. Beetrootfits about as well
  2. Mustardthe original
  3. Shallotfits about as well
  4. Turnipfits less well

Fit is the average pairing score against horseradish, flour. Candidates are from the same food group and used in at least 100 recipes.
